Ahh. I know, it’s another recipe! I apologise. I just had this for dinner and I liked it that much that I thought I should share it with you guys. The cappelletti’s were pre-made Latina Fresh brand which if you’re from Australia, you can easily purchase from Coles.
When I first got it, I had no idea what sauce to make with it. But I thought I’d get them anyway because they sounded so good. Anyway, after a little research, I decided to make a brown butter walnut sauce.
Here’s how to make it.
Walnuts, roughly chopped
Salt and pepper
Parsley, roughly chopped
Cook cappelletti for 4 minutes in boiling water. When ready, drain most of the water out. Transfer the remaining pasta water to a mug and mix a quarter of a teaspoon of flour in.
Melt some butter in a pan. When brown, add walnuts in and cook for about 2 minutes.
Combine cappelletti, thickened pasta water and brown butter walnut sauce and simmer for another 2 minutes. Garnish with parsley. Season with salt & pepper.
