Prawn, Spinach and Leek Pasta

There’s been an overload of travel photo posts here on WMM lately so thought I’d sneak this recipe post in to break it up a little bit.

I made this for dinner the other night and it was great so I wanted to share it with you all. It’s so simple and easy to make and I only used 6 different ingredients.

Prawn, Spinach and Leek Pasta

400g raw prawns, peeled and deveined
100g baby spinach leaves
1 bag of Vetta Veg Twists
1 leek, white and light green part sliced
1/4 cup lemon juice
butter
salt & pepper

Cook pasta according to packet directions. Vetta Veg Twists are a colourful alterative to normal pasta. You can use any kind of short pasta if you prefer. Once pasta is cooked, drain and stir in 1 tablespoon of butter so pasta doesn’t stick together.

Melt 2 tablespoons of butter in a pan and add leek in. Cook leek for about 3 minutes and add prawns. Cook for a further 3 minutes or until prawns are pink. Add lemon juice and stir the pasta in. Add spinach leaves in and season with salt and pepper.
