Poached Eggs on Sourdough + Feta and Dukkah

Here’s something easy and quick for your mornings. As long as you’ve got the ingredients ready, the cooking time shouldn’t take long at all. This is also perfect for brunch on those weekends you feel like sleeping in a little bit.

Poached Eggs on Sourdough + Feta & Dukkah

Poached Eggs (if you don’t have an egg poacher):
2 Eggs
1 tbsp white vinegar
Small pot
3 Cups of water

2 Slices Sourdough
Avocado to spread
2 Handfuls of baby spinach leaves
Feta to sprinkle
Dukkah to sprinkle
Salt & Pepper

How to Poach Eggs without an egg poacher:
Bring water and vinegar to a boil. Once water has boiled, bring it down to a simmer. Crack egg into a bowl. Stir water and vinegar with a spoon to create a whirlpool and drop egg in the centre. Cook for 2-3 minutes. Using a slotted spoon, take egg out and drain on a paper towel.

Note: Make sure the yolk is runny. There is nothing worse than poached eggs with an overcooked yolk!

Putting everything together:
Step 1: Slice a few slices of the sourdough bread.

Step 2: Wilt spinach leaves in a pan with a tiny bit of olive oil. Season with salt and pepper.

Step 4: Toast sourdough. Spread some fresh avocado on toast.

Step 5: Top toast with wilted spinach and poached egg. Finish off with a sprinkle of feta and dukkah (see here for my dukkah recipe).
