In celebration to me finally getting a job, I decided to treat the boyfriend to a night in of wine and dine the other night. Yes, I finally hung up my unemployed pants (tracksuit pants) and I am looking forward to change!
I whipped this easy recipe up because I purchased some fresh avocados from the supermarket (they have finally gone down from $3.50 each to $1.50) and I wanted to use them because I freak out that they will go off and I’d be wasting money. 🙁
Anyway, let’s get on with the recipe shall we? 🙂
Grilled Chicken and Avocado Pasta
Handful of spaghetti (you can use whatever pasta you want, you’ll need more than a handful if you’re not using spaghetti or fettuccine)
3 chicken breast pieces, sliced in small cubes
2 tablespoons of mustard
1 brown onion, diced
1 avocado, mashed with a bit of lemon juice
Handful of baby spinach leaves
1 tablespoon olive oil
Salt and pepper to taste
Put the kettle on. Heat olive oil in the griddle pan. You don’t necessarily need to use a griddle pan, you can just use a normal pan. Add the chicken in and cook in high heat for about 5 minutes.
Use the kettle water to boil the pasta in a pot. Don’t forget to stir the pasta every now and again so they don’t stick to each other.
Check on the chicken and turn the heat down. Add mustard. Cook for another 5 minutes.
Add avocado mix and spinach in with the chicken. Cook for another 2 minutes.
When pasta is ready, drain and stir in with chicken. If you find it too dry for your liking, you can use a little bit of the pasta water or even add a drizzle of olive oil. Add salt and pepper to taste.
This recipe makes 2 servings.
Serve with your favourite white or red. 🙂
The mustard and avocado go quite well together and this recipe is definitely something different. I also think the lemon juice mixed in the mashed up avocado complements the grilled chicken quite well.
